“Make ‘em Your Way”

++++++++++++++++++++++++++++++++++

Do you expect a recipe you try to be exactly like the beautiful one pictured in a cookbook? Guess what? It doesn’t happen. Recipes have a list of suggested ingredients and show you a possible road, but they remain just guidelines.

A recipe’s job is to entice, guide, and encourage a new learning. That’s because a recipe becomes a little bit of you as you add, mix, substitute, leave out, or change things. So many features vary. To name a few, there are different ovens, pans, measurements, environments, ingredients, and taste preferences. Some tomatoes are sweet, some tart. Cinnamon can be strong or sweetly mild. Certain recipe baseline knowledge is assumed, but recipes are not like the robot in your car.

Cooks need to tweak those recipes, adding more, less, mixing, stirring, or just folding. How long does a recipe really need to cook? You decide that.

People learn from basic recipes but soon realize that other ingredients can be substituted, or two recipes can even be combined or weaved together. That recipe is a jumping-off point to create your own dish.

SWEET, SALTY & SIMPLE

Dorie Greenspan

“Over those years, I worked on the kinds of recipes I love most, recipes that are simple, rely on basic techniques and have deep flavors and complex textures. I created recipes that are flexible, that allow you to play with them, swap ingredients, fancy them up with icing or leave them bare, their natural color their own decoration. And, since I love surprises, I built them into lots of the recipes. I’m happiest when a recipe that looks familiar harbors something unexpected.”

This is her latest book:

Thick ’n Creamy Golden Corn Chowder
No heavy cream – just the goodness of farm-fresh corn

About the Recipe: As early as 1884, corn chowder was a favorite dish to prepare. The creamy texture of fresh corn and its sweet flavor make it a popular holiday dish as well as a comfort supper soup. This recipe is especially tasty because the natural flavor of the corn, enhanced as it is blended into a smooth, thick silky broth, is served with bits of corn and potato cubes. Just garnish with a sprinkle of fresh minced chives or parsley.

Smoky Mediterranean Shepherd’s Pie
Comfort dish that can be made ahead

About the Recipe: Shepherd’s Pie is a rustic main dish that in early cookery books used leftover roasted meat with mashed potato crust on top. The term shepherd’s pie is used more commonly when the meat is lamb. This recipe has a smoky flavored meat combination enhanced with sweet potatoes and kale. The creamy mashed potatoes cover the top of the pie. It’s simply delicious!
