Bridgeton Mill Indiana  Covered Bridge

‘One of the few Historic Flour Mills still operating in the State of Indiana.  In the early 1800’s there were upwards of 2000 flour mills operating, some within 3 miles of each other. The owner Mike Roe said this flour mill has produced flour every year since it was built in 1823.  Amazing.

Traveling the rural roads through miles of farm country on a Saturday afternoon, we finally arrived at the bridge, which was built in 1868 by J.J.Daniels. Close to the Bridge stood The Bridgeton Mill, a three story red building that overlooks the waterfall. Operating for over 180 years, it’s one of the oldest continually operating mills in Indiana. They have massive stones that gently grind the wheat into flour and the corn into meal and they were doing it today.

Mustard Glazed Salmon with Pickled Peppers and Crispy Capers

Salmon is easily cooked in a Pantelligent frying pan with autopilot, which is attached via Bluetooth to a smartphone, controlling a Wemo wifi activated switch connected to a Waring Hot Plate,  allowing the smartphone to watch your time and control your temperature.  All you need to do is flip the fish when instructed to do so and apply a light mustard glaze, which is flavored with pickle juice. When it is finished, the pan will tell you to remove and enjoy your fish. It even reminds you to turn off the heat.

Remove the salmon to a serving platter and spoon a dill pickled pepper topping and some crispy capers over the fish. Delicious!
