.About this recipe: I expected the typical creamy mac ‘n cheese dish but this recipe is really extra special. It forms a browned soft crust around the edges of the dish while the center stays soft and cheesy.  It reminded me of an omelet wrapped around thick creamy cheese macaroni.  It would be a perfect luncheon dish with a light side salad or an extra special side dish for a holiday dinner.

About the Recipe:  Eggs were rationed during WWII so this authentic salad recipe used only carrots, cheese, cabbage, and mashed potatoes. It’s a healthy meal that could feed an entire family of four. The best part was potatoes weren’t rationed and could be home-grown. This attractive salad, served in Great Britain, was only lightly seasoned.

About this Recipe:  This was one of the most popular recipes and was so easy to prepare since it used the new dry onion soup mix.  As expected, cooks added some water, mushroom soup, wine, or even tomatoes to the basic recipe.  If preparing this recipe today, you might want to use a slow cooker or Dutch Oven pot.  A note of caution:  If you use the aluminum foil wrap, make sure to seal it securely.

Their mantra was make it fast, easy, and healthy.  Microwave ovens soared to the forefront, cooking everything from eggs to steak in minutes. Stores stocked their shelves with new convenient products such as bagged salad, cut-up carrots, quick sauces, pudding pops, bottled dressings, wine coolers, diet soda, lo-cal products, and meals like Lean Cuisine.

About the Recipe:  This meatloaf has a wonderful blend of flavors with a light spicy touch.  It is delicious served with the sauce and garnished with cilantro and chopped multi-colored sweet chopped peppers. We served this with baked golden potatoes and a fresh salad.  I also think the sauce would be wonderful tossed with shredded beef on a sandwich.  I was surprised that it wasn’t as spicy as I expected.  Also, to make his recipes easier, prepare some of the seasoning mixture ahead of time to use when you are cooking.

About this Recipe:  As expected, these are fat free muffins that used applesauce in place of butter.  Healthy recipes were poplar during this time. These muffins do not have the standard texture you might expect in a typical muffin. We prepared them using dried apples and fresh blueberries.  The apple-ginger muffins would be nice for a breakfast treat, but we found the blueberry muffins needed more flavor.  It might be nice to add shredded orange or lemon peel with the berries.

Kaleidoscope Grilled Cheese Sandwiches

About this Recipe:  Perfect for Fun, Celebrating, and Grilled Cheese Delicious!  I couldn’t wait to see the inside of our sandwich. We used natural colors to tint our cheese and loved the idea of mixing our favorite flavors of white cheese.  The sandwich melts into a kaleidoscope of colors and even created some of its own green streaks in it.  We also thought that we could slice them into triangles to serve as appetizers. Some things just make you smile and this is one of them.
