Italian Spinach Soup
Great flavor, vibrant green color, and a healthy choice

About the Recipe: Year round spinach is a popular ingredient used in cooking. The spring season, however, provides an extra incentive with spinach’s young tender leaves and savory sweet flavor to add it to recipes. This soup combines caramelized onion-flavored broth with Italian seasoning, swirling with roasted red peppers and plenty of Popeye’s favorite veggie, spinach. Add a crunchy garnish of croutons, almonds, and shaved Parmesan cheese. It’s a vegetarian dish that is hearty enough to serve for dinner with crunchy slices of Artisan bread.

Acadia Tucker

We asked Acadia Tucker to stop by and give us a few hints on growing food without a yard.  Her books are a call to action to citizen gardeners everywhere, and lay the groundwork for planting an organic, regenerative garden. Even in your own kitchen.

Acadia lives on the East Coast and grows hops to support locally sourced craft beer in New England. She is the author of Growing Good Food and  Growing Perennial Foods, which is a field guide to raising resilient herbs, fruits, & vegetables. Her just-released book is Tiny Victory Gardens: Growing food without a backyard. Acadia is a Rodale Institute Ambassador on regenerative agriculture.

Climate activist and farmer Acadia Tucker fell in love with container gardening after glimpsing its potential to produce food―lots of food. By applying select growing practices, and managing for square inches rather than square feet, she has come up with instructions for growing a small-scale farm in your patio, on your stoop, or in your dining room

This is a handbook for growing a Victory Garden when the enemy is global warming. Acadia Tucker, a carbon farmer and gardener, invites us to think of gardening as civic action. By building carbon-rich soil, even in a backyard-sized patch, we can capture greenhouse gases and mitigate climate change, all while growing nutritious food

These books are available through Amazon, Barnes & Noble, and fine bookstores across the country.
