1893 – The Palmer House Brownie – Chicago

Today, we want you to join us and enjoy a decadent taste of brownie history. The delightful brownie treat was introduced to the world when it appeared at the 1893 World’s Columbian Exposition (The World’s Fair). Bertha Palmer was the wife of Potter Palmer, a successful businessman who built Palmer House in Chicago.

Bertha Palmer was the president of the Board of Lady Managers and charged the pastry chef, Joseph Sehl, to make a “ladies’ dessert” that she could bring with her to the 1893 World’s Fair. She wanted a dessert that wouldn’t crumble like a cake and could easily be packed in a box lunch.

The result was a super-rich, fudgy, chocolate treat, the became known as the Palmer House Brownie. Visitors to the World’s Columbian Exposition in 1893 tasted the first brownie recipe in recorded food history.
