Fresh garden herbs are the secret ingredient in a cook’s tool box

 Stephen Lee, known as the Herbmeister, is a specialist in herb garden planning, planting, growing, harvesting and/or preserving and has twenty plus years of culinary education experience.  A well-known cookbook author, founder of The Cookbook Cottage for its worldwide cookbook collection, Culinary Educator, twice Chairman of Cooking  Schools and Teachers committee of the International Association of Culinary Professional, and is presently a Superintendent of the Culinary Department of the Kentucky State Fair. He is, also, the Administrator of the Free Lunch Program for the homeless at the Cathedral of the Assumption in Louisville, Kentucky.

Stephen is considered a “culinary grandson” of the renown French Master Chef Auguste Escoffier.  Escoffier established the modern menu sequence and standardized the way recipes were written.

Herb Infused Oils – Rosemary Oil & Basil Oil

‘1. Keep refrigerated; store covered.
2. Before servings, let oil reach room temperature. It will take about 20 minutes.
3. Use for gifts; Include storage directions and serving ideas.
4. For best results, use fresh herbs; washed; dried. Blanch soft herbs for vibrant color. Woody herbs; heat in oil.
5. Use your favorite whole or ground spices, citrus, herbs, or nuts. Keep the blend simple.
6. 1 Tablespoons flavoring to 1 cup oil is the standard mix.

What a surprise!  A fresh salmon fillet cooks on top of dill scented salt in a cast iron pan. The reward is a salmon, so moist and full of flavor.  Finally, there’s a recipe that is easy enough to make after work and offers you the gift of good health.

Place Center Cut Salmon Filet (skin side down) onto a Hot Bed of Sea Salt

Spread Sea Salt and Minced Dill over Entire Bottom of Cast Iron Skillet – Heat Salt on Med-High Heat for 5 Minutes

Drizzle 1/2 Fresh Squeezed Lime Juice onto Salmon after 3 Minutes Cooling Time

Shaker Style Tarragon Roasted Chicken with Sweet Carrots & Spring Peas

Stuffed with lemon, onion, and lots of tarragon, this chicken first bakes upside down in white wine.  Turn over; roast until golden brown.  The result is a chicken that has a tantalizing Tarragon flavor and every part is so moist. Peas and carrots nestle in the drippings to gather its flavor before serving.  Even if you use it the next day, it’s delicious. Make sure to use a pan only slightly larger than the chicken you are using in order to maintain a sufficient pool of liquid for the chicken to cook within and to minimize evaporation.
