Savory Thai Peanut Sauce Rolls

About the Recipe:  This is a winning roll recipe that would be perfect to serve with a holiday dinner. The mild peanut flavor is outstanding with bits of onion and cheese. Its texture is angel soft with a crust whirled into an attractive swirled design.

Cook’s Note:  I used a mixer hook attachment to knead the dough for five minutes. I also used a standard brand creamy peanut butter, making a thinner sauce. It will thicken when chilled for a longer time in the refrigerator.

Bake the Rolls: Bake 20 – 23 minutes, or until golden and internal temperature registers 195°F – 200°F. Loosen edges of rolls with knife and transfer to rack to cool.

Yield: 12 Rolls

Grandma’s Golden Babka Bread

About the Recipe: Golden Babka Bread is layered with savory herbs, seeds, and cheese, creating delicious swirls of flavor. It’s a wholesome, ethnic babka created from Grandma’s jotted notes and heavenly inspiration. As with many Eastern European breads, it’s difficult to stop eating just one slice.

Cut the Dough Logs: With sharp serrated knife, cut the log lengthwise in half; turn halves with filling-side up. The exposed filling may open slightly, so place the logs close together.

Shape into Round Wreath: Place logs to form an “X”, keeping filling-side up. Starting at the center, twist one half of the log over and under the first log, keeping the filling-side up. Twist the remaining dough in the same way, forming a braid with filling partially exposed. Shape into a 9″ – 10″ ring, seal ends. Tuck loose seeds into top of ring.

Second Rising: Cover lightly with plastic wrap; let rise in warm place until puffy, 45 – 60 minutes. Near the end of the rise, preheat oven to 375°F.

Add Glaze and Bake Bread: Whisk together egg and water; carefully brush on wreath. Bake 22 – 28 minutes or until golden brown and internal temperature registers 200°F – 205°F. Remove bread to cooling rack. If desired, brush bread with olive oil and cool before slicing.

Yield: 1 loaf, 24 slices

Bacon Onion Baby Brioche
Tender onion bacon flavored rolls have a melt-away cheese center

About the Recipe: The brioches are easy and quick to make. All you need to do is mix the batter, and let it rise once for fresh yeast rolls. The tender bacon onion brioches have melt-away cheese centers that make them irresistible.

Add Cheese Cubes: Grease 12 brioche or muffin pan cups. Cut cheese into 12 (1/8 ounce) cubes. Divide dough into 12 equal balls; remove 1 teaspoon dough from each ball, forming 12 small balls. Place one large ball of dough into each cup. With finger, make a deep indentation in center. Place cheese cube inside indentation. Place small ball in the indentation, lightly seal edges with fingertips.

Rise Dough: Cover; let rise in warm place until double, about 45 minutes.Add Topping: In small bowl, beat together egg and water; brush on brioches. Lightly sprinkle with crushed onion crumbs.

Bake Rolls: Bake in preheated 350°F oven 20 to 25 minutes or until golden brown. Remove from baking pans after 3 to 5 minutes. Serve warm with soft butter. Makes 12 brioches. Prep Time: 3 hours  Bake Time: 25 minutes
