Ir requires consistent 40F days and sub-freezing temperature nights to deliver tree sap from the selected trees . Three species of trees: 1) Sugar Maple, 2) Red Maple and 3) Black Maple produce the highest quality of Maple Syrup.  But 22 species of trees can produce a type of syrup of lesser quality.
