Holiday Crispy Garlic Potatoes

I love the idea of boiling the potatoes with rosemary and garlic for flavoring.  I included sweet potatoes with golden potatoes so I didn’t have to prepare two different potato dishes.  Another bonus is the potatoes can be cooked ahead of time and finished in the oven right before serving.  If you love crispy potatoes, you will really enjoy this recipe.

This side dish can be prepared easily and finished in the oven for quick serving.  Cutting the sprouts in half shortens the cooking time and allows for a tasty caramelized flavor. Brussels sprouts are one of his favorite side dishes.

Making a Shrub for Those Holiday Drinks

Making a Shrub for Those Holiday Drinks – Non-Alcoholic

Some people believe that when you cook shrub syrup, you lose some of that fresh fruit flavor.  In place of this process, they macerate fresh fruit in sugar for several hours or a day, which release the fruit juice and creates syrup. Then if you strain the fruit, you can mix the syrup with vinegar.  This does take a little longer but creates a purer and brighter shrub.

This method did seem to be easier.  Follow these suggested details in recipe.

Crunchy Fried Field Peas

Roasted Almonds & Crunchy Fried Field Peas & Crispy Coconut “Bacon”

I wasn’t able to find field peas where I live so Nicki told me to try black eyed peas.  However, I couldn’t find any fresh ones in our stores so I purchased a can of black eyed peas.

This does not work as there is too much water in the canned peas, even after drying them.  The result was a shooting match while trying to fry them and the peas won.  After attempting to protect myself with a large skillet cover, I decided to try to roast them in a 425 degree oven for about 8 to 10 minutes, stirring occasionally.  They did taste delicious. The picture you see is the roasted peas.  However, my advice is to wait for the shelled peas before you try this recipe. You might want to consider getting a few mini skillets for serving your favorite snacks.  They are just so cute!

Maple Walnut “Pick a Pumpkin” Pie

Maple Walnut “Pick a Pumpkin” Pie

:  Are you undecided what kind of pie to make for that special party – the traditional Pumpkin Pie or some kind of Pecan Pie?  Try something new – a harvest pie with squash and pumpkin and top it with the favorite combination of maple syrup and walnuts.  The mild spiced taste is lighter with a rich maple nut crunch.  Say “Hello” to a new flavor combo.

Chiles Rellenos with Vegetable Picadillo

Poblano chiles have a slightly sweet and smoky flavor, very different from other peppers.  Aaron Sanchez loves stuffing them because it gives the peppers a chance to be the star.  I love serving them with a tomato sauce seasoned with the cilantro pumpkin seed pesto.  Perfect for that Fiesta Party!

Mixed Greens Salad with Quick-Pickled Watermelon Radishes

Mixed Greens Salad with Quick-Pickled Watermelon Radishes

It’s kale, romaine lettuce, and radishes with lemon thyme pumpkin seed dressing combined in one fresh salad.  The easy pickled radishes add a spirited taste to the lemon thyme dressing. They are not bitter or hot if they are small, but the larger radishes have a stronger heat profile. Pumpkin seeds add a delightful crunch to the dressing and salad.
