Timeless Classic Cookies Reimagined
++++++++++++++++++++++++++++++++++++
Want to make some cookie magic this upcoming baking season and create some buzz?
This time on Food for Body, Mind and Spirit we’re exploring Timeless Classic Cookies Reimagined, and it seems to me, America’s Test Kitchen has been having a fun time creating the go-to resource we all need now.
I sat down (virtually) with Stephanie Pixley, deputy food editor of ATK’s books team, and culinary producer of Cook’s Country. She’s the kind of person who lights up talking about baking projects, and she walked me through The New Cookie, their brand-new collection that takes everything we love about traditional cookies and gives them a fresh, modern glow-up.
We’re craving the Triple Gingerbread Cookies which have a bright citrus lift with a sleek two-tone white chocolate dip; Brown Sugar Milk Tea Cookies that taste like your favorite boba shop; as well as the deep-violet Ube Crinkle Cookies with their irresistible chewy-fudgy centers.
This cookie recipe collection is ready to roll into your kitchen, and into your next gathering.
Listen to the full conversation with Stephanie and get a closer look at these three sneak peek recipes that prove the classics still have plenty of new tricks up their sleeves.
Ready to bake a little differently? Let’s go.

Triple Citrus Gingerbread with White Chocolate Cookies
‘
What America’s Test Kitchen says about this recipe: “We love gingerbread but if we’re going to bake it every year, we think it needs an exciting update. These cookies are … enlivened with bright, surprising flavor from lemon, lime, and orange zests…These updated gingerbreads deserve something different than piped icing. Dipping them in two tones of white chocolate gives them a striking, modern look; plus, the white chocolate tempers some of the punch and pucker.

Brown Sugar Milk Tea Cookies
What America’s Test Kitchen says about this recipe: “ This chewy, rich, black tea–scented cookie takes inspiration from the incredible flavor of brown sugar milk tea, a boba shop favorite…We were able to approximate the super deep, dark Taiwanese sugar, by adding molasses to a dark brown sugar cookie base for lots of extra depth and chew. Infusing the butter with tea leaves gives the most pronounced tea aroma and flavor to counterbalance the sugar. A final milky glaze brings the concept together for a surprising treat”.

Ube Crinkle Cookies
What America’s Test Kitchen says about this recipe: “Ube extract and ube halaya (a Filipino ingredient that is essentially a cooked-down, concentrated jam of sweetened ube) are the most convenient forms for American cooks, and we add both to our crinkles for the strongest flavor. The extract lends our cookies a deep violet color and the earthy, sweet, nutty aroma of the purple yam. The sticky halaya enriches the flavor while giving the cookies dynamic texture: chewy-crisp edges with a dense, soft, fudgy interior.”
