French Roasted Turkey Breast with Herb Pan Vinaigrette
It’s so easy to prepare, slice, and ready to serve for that Thanksgiving dinner.

About the Recipe:  French Roasted Turkey Breast adds a savory herb flavor and pairs well with a variety of traditional side dishes, from stuffing and cranberry sauce to sweet potatoes. The turkey is delightfully moist and tender and was easy to prepare, slice, and ready to serve in about 1-1/2 hours. Enjoying a turkey on Thanksgiving seems to capture the spirit of the holiday and sharing togetherness. We served it with fresh mixed baby greens that were dotted it with bright red pomegranate seeds, adding crispness and a healthy option to the dinner.

Honey Maple Fresh Cranberry Sauce
A perfect partner for that Thanksgiving turkey.

For the Recipe: Thanksgiving always found my mother boiling up sugar-sweet cranberry sauce, and I loved watching the berries “pop” around in the pot. She liked it smooth, so she strained the berries out, creating a velvety red sauce. Later, I discovered how wonderful these sweet/tart berries could complement savory dishes like turkey, ham, or even stuffing. Our family’s treasured recipe soon found itself with whole berries, sweetened with natural honey, maple syrup, and oranges. It’s a naturally sweet/tart side dish, that is still one of our favorites to serve for Thanksgiving.

Cook’s Note: You can also use frozen cranberries for this recipe, but cook for about 5 minutes longer or until the mixture thickens.

Yield: about 2 cups

Butternut Squash Lentil Cream Soup
So delicious that we begged a waiter for the recipe.

About the Recipe: We loved the flavor of this soup so much that I begged the waiter at the California Café in Pennsylvania to reveal the ingredients, and Tech Tom scribbled them down on a handy napkin. (This was before the smart phone’s life. It’s much easier now) We later added the lentils for an interesting texture and healthy touch. Serving the soup in miniature pumpkin bowls adds a festive and fun touch for a Thanksgiving dinner.

Cook’s Note: Carrots can be used as a substitute for some of the squash; you could also swirl in sweet red chili sauce if desired. To make this easy to do and add more flavor, roast the squash and cook the lentils before making the recipe.

The rolls are made without kneading and use mashed potatoes, resulting in a soft and flaky texture. The dough can be divided if you want to create rolls suitable for appetizers, dinner, or sandwiches. Although preparing yeast rolls takes time, the process yields flavorful results. We love to serve them with olive oil for dipping.

This cake can also be baked in a 10-inch Lodge Cast Iron Skillet.

Cook’s Note: Chill in the refrigerator or wrap and freeze for later serving.
An important step is to place small spoonfuls over the entire cake and then swirl it through the top, making an attractive design.
