It’s a triple treat for Thanksgiving! Pt 1 – Magic Moments with Dorie Greenspan

Dorie Greenspan published a recipe for World Peace cookies in several of her books. She had a book signing event at The Spice House in Chicago in 2018. I knew that Dorie loved when someone takes one of her recipes and makes it their own, I decided to surprise her and added ingredients from all 7 continents to her recipe and gave them to her to celebrate her birthday.
Around-the-World Peace Cookies
This cookie contains ingredients from every continent in the world, Africa, North America, South America, Australia, Europe, Asia, Antarctica that are blended together.
She was so surprised and delighted and asked what ingredients I added. The recipe then took on a life of its own – blending a world of ingredients in perfect harmony. It became the “Around-the-World” Peace Cookies.
“Over those years, I worked on the kinds of recipes I love most recipes that are simple, rely on basic techniques and have deep flavors and complex textures. I created recipes that are flexible, that allow you to play with them, swap ingredients, fancy them up with icing or leave them bare, their natural color their own decoration. And, since I love surprises, I built them into lots of the recipes. I’m happiest when a recipe that looks familiar harbors something unexpected.”

French Apple Cake
About the Recipe: This is a simple and very moist cake that has more apples than cake. The chunks of fresh apples give the cake a bumpy golden top, which is so appealing and unusual. It’s very easy to make and can be served warm or at room temperature with or without dollops of whipped cream, yogurt, or ice cream.

Dorie Greenspan’s World Peace Cookies
About the Recipe: The cookie is a chocolate staple, a French shortbread cookie., It has brown sugar, making it chewier. It also has a generous amount of chopped bittersweet chocolate and an immediately discernible amount of fleur de sel (salt).
PLAYING AROUND Rolled-and-Cut World Peace Cookies. WPC dough has a mind of its own and it’s hard to corral it into perfect rounds no matter how you handle it. If you’re on a quest for a neater, rounder cookie, roll the dough to a thickness of 3/8 inch and refrigerate or freeze as you would for logs. If you have 2-inch baking rings, use a cookie cutter that’s slightly smaller than 2 inches, cut out rounds and center the rounds in the baking rings. (Muffin tins won’t work for these cookies.) Alternatively, you can cut out the dough and bake it on lined cookie sheets — it’s how we made the beautiful cookie in the photograph. The baking time remains the same no matter how you cut the cookies.
