Autumn is here!  Markets are starting to sell more apples, pears, squash, and of course pumpkins. This is the season we see our cooking cuisine changing. Grills start to disappear from our yards, and the toasty warm oven welcomes some slow roasts. So, say “Hello” to the Dutch Oven pan and hearty root vegetables. Bring on the smiles! There are lots of fall celebrations!

Chef Shimi Aaron –  Meet Future Babka King

Chef Shimi Aaron is an Israeli-born, LA-based chef and culinary consultant, who has previously worked and lived in Tel Aviv, NY, and London. Growing up with two avid traditional cooks in the family’s kitchen, his mother and grandmother. Having a large family, he was fascinated by food, spices, and flavors.

He was living in London when his professional babka boom began. He started combining new and old techniques on favorite family original recipes and started teaching classes on making Babka around Europe.

I’m sure that you are wondering why his Babka bread future is so bright. I soon learned that Chef Shimi creates loaves and loaves of beautiful unique babka. Some are spread with rich chocolate ganache and hazelnuts, topped with rose petals, and candied citrus zest.

Za’atar Babka Bread
A savory filled yeast leavened Babka bread that is fun to make

About the Recipe: A babka is a yeast leavened dough that is rolled out, spread with a filling, and then is rolled up and braided before baking. This originated in Poland, where it was baked in the Jewish communities. It is also popular in Israel. This recipe adds a savory twist to the usual sweet braided bread. It is filled with a za’atar feta filling. It is a fun recipe to make since it doesn’t have to be perfect. I made three breads, and they all had their own personality.  So delicious and perfect for snacking or sandwiches.

Sweet fresh carrots laced with herbs and North African spices

About the Recipe: The carrots can be served as a starter, salad, or side dish.  The spicy flavor is unique with lots of cumin and paprika. Chef Shimi told us that this dish was popular and kept in the refrigerator for a quick snack in his house. It’s very easy to make and adjust the spices as desired.  Some people enjoy adding some ground red pepper for additional heat.

Favorite snack for those big “Trick or Treat” partygoers

About the Recipe: Imagine delicious chocolate covered almonds combined with almond flavored cookies. What a yummy treat! It is the perfect partner to have with that glass of cider, cup of coffee or sip of tea. 

Just for fun, we decorated the cookies with harvest colored nonpareils to celebrate the season.
