Healthy Lunchtime Challenge

The Healthy Lunchtime Challenge & Kids’ “State Dinner” invited U.S. children ages 8-12, in collaboration with a parent or guardian, to create an original lunch recipe that is healthy, affordable, and tasty. One winner was selected from each state, the District of Columbia, and U.S. Territories. Each winner flew, with a parent or guardian, to Washington, D.C., to attend a Kids’ “State Dinner” at the White House, hosted by the First Lady, where a selection of the winning healthy recipes was served that promotes cooking and healthy eating

The Healthy Lunchtime Challenge received over 1,200 entries featuring wholesome, tasty ingredients. Winners representing all U.S. states, five territories, and the District of Columbia attended a Kids’ “State Dinner” at the White House hosted by Mrs. Obama on Thursday, July 14, 2016.

Teeny Zucchini Triangular Panini’

About the Recipe:  The vegetable patties are so delicious that you won’t even mind the extra steps to make them.  Crisp, yet moist, they produce a tasty Panini served in triangles with tomato sauce or even ranch dressing.

Healthy Lunchtime Challenge Contest – Jude V.  Age 8   New Hampshire

Jude’s Serving Suggestion:  Serve with a glass of milk and if in season McIntosh apple.|

Cook’s Note:  The original recipe grilled the lettuce with the tomato and patty, but we preferred it added after grilling.  Another suggestion would be to add fresh spinach in place of lettuce.  I used a food processor to grate the zucchini and then removed moisture from them with paper towels.  I added 1 cup breadcrumbs to form my patties.

Chili – Roasted Sweet Potatoes

About the Recipe:  These sweet chili potatoes are a delicious addition for those cool harvest dinners.  They’re very easy to prepare, full of healthy goodness, and will complement any supper or snack urges.  If these are part of Indiana’s lunch menu, I’m ready to join the lunch line.

Cook’s Note:  I adjusted the recipe for smaller family serving size.  If you want a hotter, spicier fry, add additional half of all spices. I also added the optional sprinkle of salt after baking.
