Grandma’s Italian Homemade Doughnuts by Chef Fabio Viviani

Fabio Viviani’s Italian Doughnuts as Served at Siena Tavern – Chicago

About the Recipe:  What is better than warm soft doughnuts?  These do not have a hole in the center and look just like a fluffy filled doughnut without a filling. They can be baked or fried. Chef Fabio fries his doughnuts and calls them “one sexy” doughnut.

Cook’s Notes: 

  • I love to use these potato rolls without rolling in sugar for sandwiches.
  • I prepared half of the original recipe and baked our doughnuts but they can be fried. The recipe can also be made using a traditional yeast dissolving method.
  • At Fabio’s restaurant, he served the hot doughnuts in a paper bag along with small mini bottles of syrup that can be injected into the hot doughnuts. I put the sweet toppings In small bowls for fun dipping.

 Notes:

  • He doubles this recipe, making about 30 doughnuts.
  • *Peel, quarter 4 medium peeled potatoes; boil potatoes, drain water; mash until smooth. This will yield about 2 cups mashed potatoes, enough for his original recipe. I rice the mashed potatoes to make sure they are smooth.
  • Chef Fabio fries the doughnuts in hot oil for 2 to 3 minutes.
